BAUT stands for: raw, rebellious, quirky and above all - temporary. Chef and owner Michiel van der Eerde set the standard for pop-up restaurants in the Netherlands with his high-profile BAUT concept. With the credo 'underpromise and overdeliver' Van der Eerde and his team know how to surprise a loyal group of BAUT fans and new guests over and over again.

From the widely acclaimed steak tartare with bacon mayonnaise and Asian oysters to sticky toffee with crème fraîche ice cream and the famous BAUT cocktails (like the 'Man bun machine gun'). All these special recipes and stories about 8 years of BAUT come together in this unique cookbook.

Michiel van der Eerde gained his knowledge and experience as a chef in top gastronomy at La Rive** (Amstel Hotel), De Hoefslag*, Bokkedoorns** and Oud Sluis***, among others. He was ultimately responsible for several hospitality concepts such as Envy, Mazzo, Nevy, Nomads and Supperclub. Together with top chef Robert Kranenborg and food journalist Marcus Polman, Van der Eerde was presenter and jury member of the program Masterchef Holland in 2015 and 2016.
