Italian food, comfort food of the purest kind. Like so many of us, Sergio Herman has been under the spell of Italian food culture for years. Who doesn't become happy with a plate of pasta? Italian cuisine is loved all over the world and is part of the culinary heritage, but often only authentic dishes seem to be cooked; there is little experimentation with new flavor combinations.
In his Antwerp restaurant Le Prestine, Sergio Herman presents his take on the "cucina nuova. Dishes that are fundamentally classic Italian, but always have their own flow or characterful twist and demonstrate his vision of the new Italian cuisine. So don't expect authentic pasta carbonara with bacon, rather a carbonara with pipe rigate and North Sea crab, or pappardelle with Zeeland mussels en´nduja instead of vongole.
In the cookbook New Italian, beautifully designed by Amsterdam-based design firm Mattmo, Sergio showcases 60 Italian recipes with a twist. The outstanding recipes are simply described and feature Kris Vlegels' beautiful photography so that everyone can prepare the perfect Italian dish at home.
